I am not looking for massive surf but some nice waves for beginner to intermediate level. I am travelling round so any suggestions welcome.

There are plenty of beginner beachbreaks in Brazil. Mostly located in the central (near Rio) and southern coasts. I've had friends take a trip to Imbituba and Florianopolis (or Floripa as it is more commonly called) and they said it was a solid. If you are looking for some epic surf, Chile and Peru have some massive waves.

Costa Rica, Brazil, and Kancun.

Costa Rica is not south America .. you can try Ecuador, Chile, Peru, Colombia, and Brazil .. because they are the places in which the south American tournaments are in.(specially in Colombia because is easy to get to the spots).

Chile, they do get huge swells from time to time, but im sure there are beaches with more average sized waves.
